Chilli crabs by Yanxian
Recipe: Serves 6
1) medium crabs x 4 (1 kg)
2) 6 tbsp vegetable oil
3) 16 cloves of garlic, finely chopped or blended
4) 16 large fresh red chilli, finely chopped or blended
5) 16 chilli padi, finely chopped or blended
6) 2 eggs
7) 4 spring onions, chopped to about 2 inches long
8) 2 tsp fresh lime juice
9) 1 small bunch of coriander
Sauce ingredients:
1) 2 cups of water
2) 10 tbsp ketchup
3) 4 1/2 tbsp sugar
4) 3 tbsp cornflour
5) 2 tsp preserved brown soyabean paste
Mix all ingredients well
Method:
- heat the oil well
- fry the garlic for only 1 minute
- add in the chillies and fry until fragrant
- add in the crabs and fry until they start turning red
- Add in the sauce ingredients and stir well
- Simmer until the crabs turn completely red
- Add in the eggs and stir to streak the eggs
- Simmer until eggs cook
- Add in the lime juice and stir
- Add in the spring onions and fry for a short while
- Garnish with the coriander and serve with some bread
Do not replace soyabean paste with whole soyabean, the latter doesn't add enough taste. If the chilli crab is not salty enough, use more soyabean paste to add taste.
The number of chilli padi depends on how hot the padi is that day. The best way is to blend 20 padi first, and divide into 5 lots. Add 2 lots first and continue on with adding the sauces. Taste to see if spicy enough, if not, change to simmer, then add padi lots until spicy enough.

Oh, Forgot to add that the number of eggs have to increase, possibly triple the amount.
Another thing is, I found that the sauce amount can be decreased by 1 quarter for a decent meal for a family of 7. Else, that'll be too much sauce.
